This is a pure Grillo, a white berry grape that tells like few others the vitality of the Sicilian terroir in the winegrowing sector. This variety is cultivated by the Mandrarossa winery in vineyards between 80 and 200 metres above sea level, facing south and south-east. Here the terroir is coastal, and has a silhouette of sinuous dunes, characterised by a sandy subsoil. After a brief cryomaceration, the must ferments in stainless steel containers at a controlled temperature of between 16 and 18 degrees. It remains in stainless steel for 3 months to refine, and then undergoes another 3 months of maturation directly in glass, before being released for sale.
