The grapes come from the Partanna area at about 300 metres a.s.l., rich in organic substance, with a loamy-clayey structure.Harvested exclusively by hand between the first and second ten days of September. The grapes are harvested in the coolest hours of the day.The selected grapes are subjected to maceration on the skins for about 10 days and vinified in steel wine vats at a constant temperature of 20Ā°C. After natural malolactic fermentation, maturation continues in steel before bottling and refining in the bottle.
