The grapes are harvested by hand in the cooler hours of the morning. In the cellar, the grapes are destemmed and briefly macerated on the skins at a low temperature before being softly pressed. The must is cold decanted and subsequently racked and inoculated with selected yeasts to carry out alcoholic fermentation at a controlled temperature. At the end of this phase, the sparkling wine base is left to mature in stainless steel until frothing. The sparkling process is carried out in autoclaves using the Charmat method and lasts approximately 60 days. The wine is then bottled and matured in the bottle for approximately sixty days before release.
