The grapes come from the Castelvetrano area a few metres above sea level, rich in organic substance, with a medium texture tending to sandy.Harvested exclusively by hand in early September. The grapes are harvested during the coolest hours of the day.The grapes are vinified in temperature-controlled steel tanks at 15°C. At the end of fermentation and after filtration, maturation continues in thermo-controlled steel tanks. Before bottling, the product undergoes a second re-fermentation in small autoclaves, using the Martinotti - Charmat method, in order to obtain a sparkling wine at a pressure of approximately 2 atmospheres.
