The grapes are selected by hand and immediately transported to the winery. Upon delivery, they are destemmed and then crushed. This is followed by the alcoholic fermentation phase in temperature-controlled stainless steel where we try to favour the extraction of the skin components as much as possible. Pumpovers and delestage are carried out until the sugars have been used up. Afterwards, racking takes place and the wine is left to mature in steel until it is packaged.
