The terroir of Sambuca di Sicilia, in the province of Agrigento, is particularly prone to enhancing the qualities of the Sicilian grape par excellence. Nero d'Avola grapes grow in their ideal habitat in vineyards located between 300 and 600 metres above sea level. The harmony that is established between the Cellar Cellar's winemakers' knowledge and uncontaminated nature enhances the wine's genuine notes for a result with remarkable organoleptic qualities. Once harvested, the grapes are macerated for 10-12 days at a controlled temperature, destemmed and cooled. After being pressed, they are placed in cool cement tanks, after which the wine passes into barriques to undergo malolactic fermentation. Finally, ageing in French oak barriques for 6 months further enhances the delicious aromas.
