Consistency is the totality of all wine components, except water, alcohol and volatile substances. A high consistency results in a wine that is rich in colour, aroma and flavour, and is characterised by an important density. Balance in a wine is important because it ensures that the taste is not overly acidic, ripe or bitter. A well-balanced wine is more harmonious and pleasant to taste. Integrity concerns the purity and freshness of the wine. This means that there should be no abnormal aromas in relation to the grape varieties or the wine-making process, and that the wine should have no defects.
